Todd's Broccoli & Bacon Stir Fry

1 part lean bacon parts - fat trimmed & removed
1 part chunk cut fresh ginger root
1/2 part broccoli florets, stems removed
1/2 cut up scallion incl. green tops
1/4 cup virgin olive oil
1/4 cup red wine vinegar
1/2 cup 100% lemon juice

Place olive oil & fresh ginger in unheated frying pay over medium high heat.  Allow to heat and mix ginger & oil together well.  After a couple of minutes, add in bacon and onion, stir fry all together for 1 minute, then add in broccoli.  Stir fry for 2 minutes, then add in wine vinegar.  Stir in well and cook an additional 2 minutes, stirring every 20 seconds.  Add in lemon juice, stir fry an additional 2-3 minutes or until broccoli slightly begins to turn color.  Serve hot!
